Recipe // SW Tex Mex Chilli

Chilli is often my go-go dish when I want to make something yummy, healthy but quickly! I have my own chilli recipe down to an art but in a bid to shape up, I decided to give this completely syn free Slimming World chilli a go! The majority of the ingredients were the same, just lots of spices thrown in for good measure and give the dish a kick! Ingredients Lean mince – or quorn if you’re veggie 1 yellow pepper 1 red pepper Handful of mushrooms 1 red onion 1 tin of kidney beans Paprika Chilli powder Cinnamon Beef stock – I use Knor Rice! Method wise, it’s easy! Chop your veg and throw in a large frying pan along with a touch of frylite. Begin to flavour with a  dollop of paprika, garlic and chilli powder. Once the veg is simmering in the pan add your meat and stock to the mix. In a seperate pan cook your rice on a low heat. Allow the chilli mix to simmer for 20 minutes or …

Weekly food shop haul

This blog is here to chat about food and beauty equally but when I’m on a health kick it shows with an array of new recipes to try. But today I thought I’d try something a bit different with my weekly food shop haul. I’m really nosey and love seeing what people pop in their basket at the supermarket. So I thought I’d go one further with a haul. I’m back following Slimming World so I picked up an even mix of veggies, breakfast food and quick snack. So let’s get started- Cereal – museli and Aldi’s own special k Veggies – butternut squash to make soup, mushrooms for yummy garlic ‘shrooms, avocado cos obvs, pea shoots and leaves to make tasty salads and grapes to snack on at work. Pita breads – homemade kebabs are a winner in my book. The perfect fakeaway meal! Fishcakes are a new addition to my shopping list. The weekly round-up

Blog posts have been quite spare around these parts lately, with the weekly round-up appearing each Sunday.  Next week food and beauty posts will make a return but for now, here’s been my week in pictures.  Officially one week in to back on the healthy train following Slimming World again. So I made fish tacos with homemade guacamole and a yummy roasted sweet potato with chilli and feta. Mmmm, expect that recipe soon! At work I’ve been learning to code and this quote by Karlie Kloss sums up why. It’s such a useful and relevant skill, with bloggers showcasing just that.   And I’ve just got back from a wedding so a little selfie to show off my dress couldn’t be missed!  See you next week when posting regularly shall resume! 

5 days, 5 healthy meal ideas 

Since the start of the year I’ve been following the Slimming World plan, on and off. It works well for me as I don’t feel restricted and can still enjoy naughty meals such as curries and chilli without the added badness. After a couple of months over my birthday where I’ve massively indulged, I’m back on track and really enjoying planning meals from scratch and finding new ingredients to try. So, give myself a push and keep healthy eaters motivated, I thought I’d share 5 of my much-loved weekly meals, that don’t take forever to make. First up is chilli with boiled rice and avocado. I love avocado. I must eat it daily and love trying to incorporate it into new meals. I often make quorn chilli as it’s a nice change from mince meat. Next up is my weekend treat – chicken kebabs without any naughty sysn sneaked onto the side. Marinated chicken, avocado, feta cheese and a wholemeal pitta. Delicious, right? Bake Off: Chocolate Victoria sponge

If I knew you were coming I’d have baked a cake…Just as well I did then isn’t it! In a bid to get back on track with Slimming World after a couple of weeks of naughtiness, I’m reigning my snacking and syns in and starting again on the straight and narrow. But dieting doesn’t have to be all doom and gloom.Whilst I much prefer savoury to sweet, craving crisps and dibs and a huge ol’ glass of wine on the side come Friday night, every now and again it’s good to give in to chocolate cravings. So I baked a cake. But this was a cake with a difference. I substituted brown sugar for sweetener – Canderel. The lovely guys over at Canderel got in touch to see if I would be interested in putting the savour to the test and use it in a range of foods, other than a morning cuppa! Tasty Tortilla Pizza

Since the start of the year I’ve been following Slimming World. The first month I lost steadily, whilst the last few weeks have lead to a steady sustain, which is deserved after Valentines weekend and my Grandad’s 90th on Sunday. However I’ve found the perfect balance is just to incorporate it into your usual lifestyle, rather than treating it as a diet. Now I’m over two months in, I have figured out what works for me, how I can still allow myself treats, such as Friday wine and meals out, without overly rocking the scales. However, it’s nice to try new recipes and find yummy alternatives for my favourite foods. And, this week I gave tortilla pizza a go. Complete with my favourite toppings, it was delicious, yummy and didn’t fare too badly on the syn front either! Ingredients Tortilla Tomato puree or passata Low fat grated cheese Feta and smoked cheddar Green and yellow peppers Cherry tomatoes Simply load up, pop in the oven and you have a guilt-free dinner made in minutes!

Slimming World update – Week 3

I’m now three weeks into following the Slimming World plan. Ive decided to do it myself, attending the class to get weighed to ensure it’s accurate but skipping the group chats as I feel I’m doing well on my own. I decided to blog this to keep me on track and simply to highlight, it is that easy. I’ve still enjoyed desserts and alcohol, on moderation and within my syns. But upped my fruit and veg intake, cutting out snacks but enjoying meal prep and home cooking again. Three weeks in I’ve lost 5lbs. A nice slow but steady start. Showcasing it is a lifestyle change, not a quick fix. My friends, family and bf are really supportive and it hadn’t felt like too much of a transition. Hopefully this is just the start of a healthier me….

Preparation is the answer…

If you fail to prepare, you’re preparing to fail – a little saying that rings true when you’re trying to lose weight. Temptation is everywhere and this past week I’ve been away with work. That meant a cooked breakfast here, glass of wine there and one kitkat chunky later, the scales are refusing to budge. I have a set routine meaning I’m a Tupperware queen, taking my breakfast and lunches to work with me and having my evening meals planned out. But like I say, this week I relaxed, enjoyed myself and recognise now is the time to reign it back in. One of my guilty pleasures lately is stalking recipe ideas on The Body Coach’s Instagram page and then taking my weekly trip to Aldi to stock up fresh ingredients for the following seven days. Noodles, curries, risotto, pasta dishes and salads shall all appear on this very blog soon. Showcasing how quick, easy and, most importantly, cheap meal prep can be. So keep your eyes peeled for some recipe inspo heading your way…..

Easy peasy breakfast ideas

Last Wednesday I took the plunge and joined my local Slimming World group. A couple of friends of mine have joined over the last six months and I thought I would give it a go. In terms of my weight I would like to lose half a stone ideally, nothing too drastic. But, I want to find healthy alternatives to many of my favourite meals and redefine my eating habits. Currently I’m about a week in, having followed the free 7 day plan on the website from last Sunday. I’m really enjoying incorporating more fruit and veg into my daily routine and breakfast is fast becoming my favourite meal of the day. The plan is simple to follow and I have been enjoying Weetabix minis which are classed as one of my two Healthy Extra options. Topped with blueberry and cranberry linseed and fresh blueberries, it does keep me full till lunch. I enjoy it with a 20g helping of semi-skimmed milk, my second Healthy Extra. I buy all my ingredients from Lidl and Aldi, …
