Veggie Meal Inspo for Autumn

Autumn recipes are the one, aren’t they. Cosy, warming meals when it’s getting colder outside are so welcome during this time of year. And this also means lots of one-pot meals and less washing up.

Crispy Tofu Laksa

This was my first time having and eating a laksa and it was delicious! I rarely buy or cook tofu either and this recipe has totally converted me! Cooked in cornflour to crisp it up as as game-changer and we remade this for lunches too.

Mushroom, Kidney Beans & Black Lentils Taco’s

Mexican recipes are a go-to in my house during the week. Really quick and easy to make after work and lentils and kidney beans are so filling.

Pulled Jackfruit

We spotted that Aldi now stock tinned jackfruit a couple of weeks ago so I made a not so quick but easy. I’ve built up quite a hefty herbs and spices collection over the years so my sweet and smoked paprika, garlic salt, cumin and assorted soy sauces got their time to shine with this recipe!
