It’s been a hot minute since I’ve properly blogged and shared recent recipes I’ve been making. During lockdown when my days consisted of daily dog walks and sunbathing I was a regular round these parts but since starting my new job, it’s safe to say I’ve been slacking.
But, we move. I haven’t tried too many new recipes lately but of the few that I have, they were well received and making their way into the weekly mix. That said, I have lots of new recipes in the pipeline for the coming weeks, so stay tuned.
Found on my fave app, BBC Good Food, we’re back to following a pescatarian diet after committing to core veggie for a while. I’ve been wanting to incorporate fish into more recipes and here’s a sentence I never thought I’d say; cooking with cod is a delight! It’s lovely to marinate and is such a great alternate to meat in Mexican style wall dishes.
Yep, another curry recipe. But they are honestly my favourite recipes to cook. I received a very cool #workperk of a LIDS (Liverpool Independent Delivery Service) food box when I just started at my new job and it was packed with fresh fruit and veg. I decided to use the fresh toms, Aubergine and chilli peppers to make a huge vat of lentil curry. Always a winner.
Another recipe using the contents of the LIDS box. Whilst we buy a tonne of veg in our food shop each week, I never buy Cauliflower or Cabbage and finding myself with two huge ones to use up and loads of vermacelli noodles after a trip to the Asian supermarket, a huge noodle soup/broth style dinner was just the ticket.
Again, taken from BBC Good Food, we were pleasantly surprised by this recipe and will be having it again at some point for sure!
