Cooking is my way to relax and de-stress after a busy day at work. I make it my mission to include as many veggies as possible within each dish, so it’s healthy in terms of ticking off your 5 a day but also cancels out the dollop of cheese on top.
Mexican style dishes or one-pot dishes are my fave and these two recipes are tried and tested and well-loved –
Halloumi, Spicy Veg and Mexican Rice
Super easy and you can be eating within 20 minutes. Chop all your veg up – mushrooms, tomatoes courgette, leeks, red or white onion, spring onion – whatever you fancy in a hot frying pan with a dash of frylite or coconut oil.
Grate in garlic, season with fajita spice and leave to cook.
Microwave spice rice – done.
Slice your halloumi and fry in coconut oil – turning to brown each side for 5 mins.
Serve, scoff and enjoy!
Chilli Topped Hmemade Chips
Start off by roughly slicing two large potatoes into chunks. Chips or wedges – it’s your call. Once sliced, throw in a pan of salted water and boil for 15 mins till softened. Once complete, frylite a baking dish and bake in the oven for 20 mins on a medium temperature till crispy and golden. Et voila, perfect homemade chips.
Make your chilli by browning off mince, I use Quorn, onion and peppers in a frying pan. Add garlic, black pepper, kidney beans and season well using taco or chilli spice.
Once cooked, pile onto your chips, add lots of grated cheese and pickles and cook in the oven again for 10 mins until melty, gooey cheese is ooozing of the top. Devour and enjoy!
