Eating Veggie – Cooking Hacks & New Restaurant Finds

Darren and I worked out that we’ve been veggie/pescatarian for four months now which we’re very proud of ourselves for sticking to it and more importantly, trying new foods and recipes to mix it up and avoid getting stuck in a meal plan and prep rut.

So what’s been a hit?

Casa Italia Vegan Menu Launch

Last month I was invited along to Casa Italia to sample the new vegan menu. Compiled and introduced into the popular Liverpool restaurant by plant based chef, Bettina who has written the cookbook ‘Happy Food’ it’s a positive step for the Liverpool food scene and the Italian restaurant.

We tried a couple of dishes on the day and in excited to hear back and sample a couple more. The garlic mushrooms and vegan chorizo pizza was insaaane. Highly recommended!

Trying New Foods and Recipes

I’ve invested in a couple of new recipe books to help us along and try new meals, my faves being Happy Food by Bettina’s Kitchen and The Green Roasting Tin by Rukmini Iyer. I also want to get the new Veggie Lean in 15 book soon too.

New meals that are cost friendly but also really easy to make that we’re loving rustling up after work are;

  • Paneer Tikka with Coconut Quinoa
  • Veggie Chilli with Nachos
  • Pesto Gnocchi with Green Veggies
  • Mediterranean Roasted Veg with Feta and Hummus

Eating Out on a Veggie Diet

I don’t know if it’s because we’ve just had Veganuary or because veggie diets are more readily accepted, but we’ve eaten out quite a lot since we gave up meat back in October 2018 and we haven’t had too much of an issue.

I thought we would find basic choices on menus such as pasta dishes or risotto, basically stuff you can make at home and generally don’t want to pay for.

But we’ve had a wide variety of different dishes from Wahaca, Las Iguanas, pub food and vegetarian cafes too.

I met up with my bestie for lunch recently and went to Chai Chai in Ormskirk. It wasn’t open when I used to live there but it’s a vegetarian cafe and health shop next door. The menu was varied and I went for a super green burger with sweet potato wedges.

I don’t see myself eating meat again any time soon tbh and I’ve not missed it either.
