Recipes // 4 Easy Dinner Recipes

It’s been so long so I lasted posted recipes on Ruth Writes. Nearly a year I think. If you know me in real life you’ll know I love to cook. I’ve followed Slimming World for nearly a year now and having successfully lost (and kept off!) 1 and ½ stone, so cooking tasty dinners that taste naughty yet nice is a must!
So, expect lots of new recipe posts about meals I’ve tried, tested and enjoyed making. Just like these four…

  1. Sausage Casserole

Sausage casserole is a firm fave in our house. I used Aldi’s skinny sausages, threw in loads of chopped veggies – courgette, mushrooms, leeks, peppers and onions along with paprika, chilli flakes and chopped tomatoes. Served with mash, this is a winner one-pot dish.

  1. In-a-hurry Curry Fried Rice

Taken from my Joe Wicks, Lean in 15 cook book, this recipe does what it says on the tin. It’s really simple to make and fast too – great if want to eat fresh without spending all night in the kitchen. I love the Joe Wicks books as they’re very real – in the sense that you don’t need lots of obscure ingredients and you will use anything you buy for a particular recipe again in another dish.

  1. Stir-fried Veg & Curry Sauce

This is a meal idea I spotted doing the rounds on Slimming World IG accounts. Mayflower sauce is an excellent SW cheat and it’s only 4 syns too – bonus. You can normally find it stocked in Home Bargains or B&M.  I like to make my own Chinese fakeaway  – stir fried chicken and rice, with curry sauce. Oh and a random slice of garlic bread on the side. Carbs 4 life.

  1. Veggie Mac & Cheese

Mac & cheese would be my ultimate death row meal. But, it’s something I’ve only recently attempted to make myself. Whilst I would class myself as a decent cook and one who tends to go ‘off-recipe’ quite often, Ive always stayed away from attempting a white/cheese sauce. Until I got my new kitchen that is!
This veggie mac & cheese is packed with veg – mushrooms, courgettes, leeks, red onion and I think next time I might add spinach/butternut squash too. Once all the veg had pan-fried in frylite, the cheese sauce was the perfect consistency and the macaroni was cooked, all the components went in a pan and under the grill to brown slightly. Delicious!
