As much as I love cooking, some days I can’t be bothered but I still want to eat semi-healthily. So this is when I tend to batch cook a meal that will last us a few meals. I decided I fancied pesto and gnocchi and the pesto gnocchi pasta bake was born!
Every vegetable in my fridge was thrown in a pan with a spritz of fry light – I’m talkin’ red onion, leeks, courgettes, spinach, spring onions, mushrooms and peppers. I blitzed up some pesto, stirred in a smidge of cream cheese and then assembled in my oven proof dish.
