Quick-fix fruity breakfasts

I only really tend to find time to prepare a tasty breakfast at the weekend. During the week I eat my #deskfast at work, so a bowl of cereal is the way to go. But at the weekend, if I’m not hungover that is, I like to eat a nice, Instagram-worthy breakfast (we all do it don’t we?!). Enter, greek yogurt, shed-loads of fruit and linseed – so I get all the healthy stuff goin’ on too! So what do you need? Well that’s up to you! I take my trusty kilner jar and fill it with a few different ingredients to make a super healthy yet tasty breakfast. It’s all about the flavour! I start with fruit. On this ocasion I decided to pile my jar with strawberries, raspberries and blueberries. The flavours go so well together and once you add in a dollop of greek yogurt you’re onto a winner! It’s completely up to you whether you want to throw in flavoured yogurt, maybe some dried or, something I haven’t tried but just …

Pescetarian food diary – week 3

Here we are already, week 3. Now we beer to start this weeks post with an admition – I’m really starting to miss meat. I just want a burger ok? But until then with just another week to go, lets take a look back over the past week.  This week I upped my quorn game with chilli becoming a firm favourite. I tried Linda McCartney sausages and eat a big ole bowl of peanut butter noodles when I was craving something naughty.  Roasted peppers filled with couscous and feta was my favourite meal of the week whilst pitta breads became a lunchtime staple.  And I opted for fried squid on Thursday when I went out for tea. Delicious! Just a week to go till the #pescetarian4week challenge is over. Am I gonna keep it up? Find out next week….

Sneak Peek……Me Me Me Opulent Collection

With the arrival of the new Starbucks autumn cups all over my instagram, this is the signal we’ve been waiting for. It’s time to put away our beloved summer clothes and head straight into autumn with cosy scarfs, knee high boots and burgundy nails. And what better way to embrace the new season that to switch up your make up collection? I’ve made the transition ever since this fabulous Me Me Me Opulent collection landed on my desk. The Quad Palette I’ve always been a fan of a brown, smokey eye and this quad palette features lovely berry tones that can be built up to create a striking eye look. I’ve been using this when I’ve been going ‘out out’. Perfect for the impending party season, the 2 brown shades look great on their own and gorgeous when you add a bit of colour using the pinky/red and plum. Dark and Divine Mascara I think finding a holy grail mascara can be tricky. You need to make sure the brush works for you and it’s …

New MUA and Revolution Make Up Buys

I know I’m a beauty blogger but sometimes I go overboard stocking up new products. Base products and eyeshadows are  my favourite products to buy so when I ‘nipped’ into Superdrug earlier this week, I couldn’t resist the MUA and Revolution stands. Cover Up Ever since I got a sample of the Laura Mercier primer in the limited edition GlossyBox at Christmas, I finally get how important it is underneath my foundation. A couple of months ago I picked up the pro-base primer from MUA so this was a re-purchase. It’s less than a fiver too so it won’t break the bank. It goes on really smoothly and my foundation stay in place all day – even when I apply it at 7 in the morning before work. The second item I picked up was this pro-base argan plush concealer from MUA. I hadn’t used this before but I’m definitely gonna buy it again. It goes onto the skin really gently and it’s really easy to blend, covering my spots in a jiffy. It’s all …

Pescatarian Food Diary – Week 2

So, here we are week 2 following a pescetarian diet. Again, I haven’t found it that hard. I’ve eaten out a couple of times and prepared a range of home-cooked meals. Breakfast I’m finding that my diet consists of cereal for breakfasts, mainly apricot filled shredded wheat. I have an early rise throughout the week and I really look forward to my #deskfast on my commute so I need a big breakfast to fill me up. Milk is free at my work but I’m thinking about taking in my own almond milk to make my breakfasts a little healthier. Lunch During the week lunch is from the salad bar at work. There’s a great choice of salad leaves, cold veggie pasta and rice dishes. I find a small box fills me up till my evening meal. Dinner Or tea as I normally call it! The montage of my meals over the past week are mostly my evening meals. The week started with a homemade quiche. I went out for tea with the girls from work …

Hitting blog milestones

So this weekend I hit a huge blogging milestone – 10,000 page views!  Little did I know 5 years ago when I started blogging as a place to showcase my writing skills to perspective job interviews, I would still be here 5 years later. I’ve been offered some fantastic opportunities through my blog and I really love having my own corner of the internet to talk about what interests me.  The blogging industry has changed massively, with blogging now being a full-time job! 22 year old Ruth could only have dreamt of that back then!  I’ve always said I’m gonna keep blogging till I don’t enjoy it anymore but lately I feel like I’m back in my stride. I’m loving both food and beauty blogging so I’m just going with it! Thanks so much to the many of you that come back and comment, it’s very much appreciated! I’ve got lots of exciting posts planned so stay tuned!  Ruth x  *image credit – Pinterest

Recipe // Aubergine, Sweet Potato and Squash Curry

Since I set myself the challenge of following a Pescetarian diet I haven’t missed meat but I’ve really been craving a huge, fattening curry. My old choice would have been a chicken tikka masala but now I’m open to new veggie-filled recipes! After a quick search on the Good Food website, which is an absolute gold mine, I stumbled across this recipe! Combining a handful of my favourite ingredients and after a quick trip to Aldi, I was good to go. So what do you need? 1 aubergine cubed 2 sweet potatoes cubed 1 butternut squash cubed 1 onion Passata Coconut milk Curry powder / turmeric    I marinaded the sweet potatoes, squash and aubergine and then roasted in the oven for 30 minutes. In a frying pan I gently fried the onions and then added the passata and coconut milk. I then added the veg to the same pan and left to boil. And because I wanted that real ‘trip to the Indian’ experience I’ve been missing, I ate it with boiled rice and …

Pescetarian Food Diary – Week 1

I’ve never been a huge meat eater but last weekend over the bank hol I decided to go pescatarian. To find out why, read this post. So, how have I found it? Quite alright tbh. The key was preparation. On bank holiday Monday I went to Aldi and planned my meals for the week. I’ve eaten out and faced the ‘can’t be bothered to cook, what do I eat dilemma’ and it’s been ok. I stocked up on courgettes to make courgette spaghetti, sugar snap peas, sweet potatoes, avocados, sweet peppers and feta cheese. Breakfasts have stayed the same, shredded wheat with milk. Although on Sunday I opted for muesli and spelt bread with peanut butter and fruit. Lunches are really easy as my work has a veggie-friendly salad bar so I can pile my plate with salad and I added a can of tuna and an avocado for protein. At the weekend I decided to have a pita with hummus, sweet peppers and feta. So tasty and full of flavour. Courgetti was a huge …

Mini Beauty Haul

I’ve never really done a round-up of the beauty items I’ve bought the previous month or any kind of haul posts, but I thought I’d share these on here. This month, same as every month really, I’ve been loving the Body Shop tea tree toner. It leaves my skin feeling fresh and clean after I’ve removed my make up with my mercillar water and gets rid of last bits of foundation or lipstick. Eyebrow pencils. I never really stick to a favourite and I’m forever on the hunt so when I saw this one by MUA I thought I’d try it! It has a highlighter at one end and the pencil at the other so you can really add definition if that’s the look you want. Hand sanitizer. I love this stuff. I go through so many bottles so when I saw loads of different scents in Primark I had to pick a couple up. They’re just so easy to throw in your bag when you’re out and about! And whilst I was in Primark …

September’s Challenge: Turning Pescetarian

The first of September marks a new month, the end of summer and the welcome return of autumn. This year I’ve set myself a couple of new challenges and thought, why should this month be any different? Having never ran before, I completed by first ever 5k for the Race for Life and I re-joined the gym too. This year I’ve really started to think about my health and mainly my weight. Having never really thought about it before, I mean I considered a full bottle of wine accompanying a batch of homemade sweet potato wedges on a Friday night in the perfect balance. And whilst I aint giving up on the wine anytime soon, I wanted to discover new recipes. I’ve really enjoyed trying new ingredients, discovering new recipes and expanding my cooking knowledge. Which leads us back to this month’s challenge – turning pescetarian. I don’t eat that much meat anyway and I often go for the veggie options on the menu. But, I also want to get into fish and seafood a …
