Recipe time: Butternut squash and sweet potato soup

Soups are fast, filling and super easy to make. What’s simpler than chucking a load of your favourite veggies together in a pan with stock to make a batch of the good stuff?

On a recent trip to Aldi I picked up a butternut squash and thought it would be the perfect starting point for rustling up a panful of soup.

I diced the squash, a sweet potato and half an onion. Throw in a knorr stock pot, season with salt and pepper and a tablespoon of creme fraiche, blend and viola!

It has served two for the past couple of days and it certainly didn’t disappoint! Now, what kind of soup is next? I’m thinking homemade tomato…
